IRO Sushi enters Glasgow as it targets 20 sites across Scotland
The new restaurant is due to open this summer on Sauchiehall Street.
IRO Sushi has signed its first site in Glasgow and plans to open more restaurants across Scotland, with the company identifying potential for up to 20 locations.
The new restaurant is due to open this summer at 249-257 Sauchiehall Street, in the former Oodles Wok unit.
The company is also looking for additional sites and franchise partners in Glasgow, Edinburgh, and Aberdeen.
Founded in 2014 by sushi chef Chhong Sherpa, IRO Sushi sells made-to-order sushi and Japanese-inspired dishes.
The business has expanded mainly through franchising and now has more than 35 locations.
The Glasgow opening follows new sites in Bristol, Tunbridge Wells, Maidenhead, and Woking in the first half of 2026.
IRO Sushi said its system sales reached £11.1m in the first six months of the year, an increase of 28% from the same period in 2025, whilst like-for-like sales rose 20%.
The Scottish expansion is part of IRO Sushi’s wider plan to reach 100 locations globally by 2030, including further growth in the UK, Europe, and the Middle East.
