Wagamama introduces fruit-based tuna
The latest vegan innovation follows the fast casual’s vegan egg introduced last year.
A fruit-based tuna is now part of the list of Wagamama’s vegan menu items as it takes part in Veganuary.
The “suika” or watermelon tuna, which resembles a tuna sashimi, is made from sliced dehydrated watermelon, seared and dressed with miso sesame sauce and served hot with rice, pickled radish, kale, tenderstem broccoli, avocado, edamame and tofu guacamole.
The Asian-inspired fast casual previously introduced a vegan ‘egg’, made with coconut milk, cornflour and miso egg white and a Siracha mayo yolk.
“After the vegan egg we knew we had to step it up a notch to create a vegan dish that was fresh and full of flavour,” Wagamama’s executive chef Steve Mangleshot said in a statement.
