
Doma Hospitality enters fast casual market with new pizza delivery concept
Gallio will initially launch with a delivery-only kitchen in south east London in mid-August.
A subsidiary of luxury hospitality group BHL Global is set to make its first entry into the fast-casual dining market with the arrival of pizza delivery concept Gallio.
The brand, under Doma Hospitality, will initially launch with a delivery-only kitchen in south east London in mid-August, with plans to open a full-service restaurant in central London and a further three delivery kitchens by the end of 2021.
Said to be inspired by “the natural and nutritious Mediterranean diet”, the concept’s menu consists of sharing bowls, pizzas, salads and desserts, has been developed by the Gallio team in collaboration with Ben Tish, chef and culinary director of The Stafford London and Norma.
All dishes will be made from scratch and on-site. Pizzas will be customisable with add-on ingredients such as fennel salami, aged Manchego, piquillo peppers, buffalo mozzarella, chorizo, feta and vegan ‘sheese’.
Chantal Nell will serve as the concept’s operations director to launch and manage Gallio.

Gallio will offer delivery via Deliveroo within a radius that includes Lambeth, Waterloo, Elephant & Castle, Vauxhall, South Bank and Southwark.
