Gallio will initially launch with a delivery-only kitchen in south east London in mid-August.
A subsidiary of luxury hospitality group BHL Global is set to make its first entry into the fast-casual dining market with the arrival of pizza delivery concept Gallio.
The brand, under Doma Hospitality, will initially launch with a delivery-only kitchen in south east London in mid-August, with plans to open a full-service restaurant in central London and a further three delivery kitchens by the end of 2021.
Said to be inspired by “the natural and nutritious Mediterranean diet”, the concept’s menu consists of sharing bowls, pizzas, salads and desserts, has been developed by the Gallio team in collaboration with Ben Tish, chef and culinary director of The Stafford London and Norma.
All dishes will be made from scratch and on-site. Pizzas will be customisable with add-on ingredients such as fennel salami, aged Manchego, piquillo peppers, buffalo mozzarella, chorizo, feta and vegan ‘sheese’.
Chantal Nell will serve as the concept’s operations director to launch and manage Gallio.
“We are delighted to be bringing Gallio to market this August. We have worked hard on a menu that truly reflects the diverse, vibrant and wholesome flavours of The Med. After an unprecedented few months for London and the UK, the demand for freshly prepared, nutritious and delicious food has never been higher and we are confident our ‘feel good’ food and ‘better for you’ pizza will resonate with consumers. We are passionate about provenance and quality and can’t wait to bring a slice of the Mediterranean sunshine to Londoners,” he said in a statement.
Gallio will offer delivery via Deliveroo within a radius that includes Lambeth, Waterloo, Elephant & Castle, Vauxhall, South Bank and Southwark.
