
SUMI has new head chef, declares expansion
Christian Onia, the new head chef, has 10 years of London culinary experience.
SUMI declared its expansion this summer as it also appointed a new head chef, Christian Onia, who has over a decade of service to London’s finest restaurants.
Also, SUMI, a casual sister concept to Endo at the Rotundo, will increase indoor covers from 45 to 61, with additional floor space.
The restaurant is expected to reopen in September, serving up new signature dishes including seafood gohan with scallops, octopus, tiger prawns, squid, mussels, clams, trout roe and prawn dashi, and Kombu aged ribeye with brown butter ponzu, kizami wasabi and yuzu salt.
Onia is also an expert in robata, sushi and sashimi, and with extensive knowledge of Japanese cuisine. He worked at Roka, Inko Nito and Jason Atherton’s Sosharu.
