
Tapas, sharing platters, BBQs were the most successful in 2015, says research
Premier Foods released its latest Insights and Trends report for 2016.
According to the report, 36% of caterers believed that tapas and sharing platters worked well for 2015, while 33% answered BBQ dishes. 28% of caterers saw Mexican food as the most successful for last year.
A majority (74%) of caterers felt that changing their menu in the new year was important, and 77% of caterers agreed that reflecting new trends in a menu was an important way of attracting new customers and increasing visits from occasional customers.
For 2016, the results of the research predicted that consumers would want to see more fish and seafood dishes, healthy, lighter options, chicken, gluten-free, vegetarian dishes, as well as pulled dishes such as pulled pork for 2016.
"Fish consumption is increasing, and our research shows that consumers want to see more fish on menus, making sustainable choices helps protect fish stocks from over-fishing and guards the marine environment," the Premier Foods report said.
"Diversifying the choice of fish on your menu is a great way to support this, for example, try coley or pouting instead of cod, herring or sardines instead of tuna. Look at labels and check with your suppliers to see if your fish is certified sustainable."
