Exclusive: Find out what's new on LEON's menu
It’s been a busy time at LEON. Having moved to renewable energy last August, they recently announced that they would become 100 percent solar powered, just as they began offering up more environmentally friendly menu choices.
Backed by their philosophy of being kind to the planet, the summer menu includes South Indian Spiced Fish, made from smoked coley sourced from sustainable Scottish shoals as well as a coronation-ish chicken salad, new falafel wrap, halloumi and smashed avocado burger, and avocado hummus.
But more innovative are perhaps their new Hash Brown bites. Re-using the prior days’ unused fries, the dish is made by smashing these together with egg and re-baking them. This follows on from the spring time launch of a smoked salmon and egg salad which the team were able to put together using eggs that had been overproduced at breakfast time.
LEON tells us, “We share our customers concern about food waste – we love food and don’t like to throw it away. We’re always on the lookout for ways to be smart with our menu.”
But the news doesn’t end there, as the chain has also announced a partnership with The Gut Doctor, Dr. Megan Rossi. Rossi is a registered dietician and nutritionist with a PhD in gut health.
“We’d like to bring Dr. Megan Rossi’s expertise to bear when looking at existing menu items and innovations; she shares our interest in helping people to eat well and look after their gut health. She’ll be able to help LEON guests know more about their insides and why it’s important to feed them properly. She will also help us build experiences and content for our guests,” LEON explains.
Part of the menu Rossi added is the new Mango Passionfruit Kefir Smoothie, which is a source of gut-friendly bacteria and packed with protein and calcium to help keep muscles and bones in good nick.
