The demand for seafood, plant-based, ethically-sourced items is on the rise.
The increasing need to cater to dietary needs of health-conscious consumers pushed the demand for vegan products.
Food supplier Bidfresh has sought the rise in demand for seafood alongside plant-based items and ethically-sourced items for 2020, based on its latest menu insights report.
The report also noted that Halloumi cheese have picked up sales this year, as well as the sales of newer meat cuts like the flat iron steak, alternative fish species such as meagre and monkfish, and lesser-known vegetables like kale and butternut squash.
“Whilst some consumers fully embrace the plant-based trend, others are looking for that ‘seagan' combination of seafood and plant-based dishes, which is an area where we're seeing a great deal of menu innovation from customers, and have also been building our own online recipe bank,” Bidfresh CEO Stephen Oswald said in a statement.
“These ‘sustainarian' customers increasingly want to be sure that the food they eat has been produced sustainably and ethically, and they also curate their own food choices very carefully.”
Oswald underscored that 2020 menus will showcase the combination of meat and plant ingredients in dish offerings.
"There are others who have cut back on meat, but when they do eat it, expect a premium product with provenance,” he said.
