EXCLUSIVE: How Bleecker Burgers Has Made Itself An Established Player
The chain talks to QSR Media after opening their largest outlet so far.
Bleecker, having built a reputation in London's street food scene, announced the opening of its fourth restaurant at Westfield London.
Located in the first-floor dining space The Balcony, Bleecker’s Westfield outlet will have a larger kitchen than its other sites in Spitalfields, Victoria and Bloomberg Arcade in order to “serve a higher volume of customers.”
"We were approached by Westfield in 2017 to hear their vision for their new food court and we were blown away. It was also the first time we had walked into a board room with only women which made us want to work with them even more," Bleecker brand director Liam O'Keefe told QSR Media.
The new site adds nearly 30 team members to Bleecker’s overall total and is led by an all-female management team. According to them, however, this wasn't an intentional move.
"We haven't planned on this site being women run and we're not women only. What we do want to do as a company is highlight our leaders in the business and look for underrepresented groups in doing so," O'Keefe continued.
The opening coincides with the chain’s recent announcement that it has tapped Aubrey Allen as their new beef supplier.
Bleecker says they have no future plans "currently". "It's all about making our new and current sites the best Bleecker they can be," O'Keefe said. "There are different challenges but it's given us the opportunity to build a team."
