EXCLUSIVE: LEON revamps menu with vegan and vegetarian offerings
LEON has recently launched its spring menu, focusing on the development of its vegan offering. It has introduced the new Vegan Meatless Meatballs and The LEON Plant Burger. To round things off, LEON is partnering with Greenwich-based vegan baker Ruby’s of London to relaunch its cake counter.
QSR Media reached out to find out more about the newly installed menu and partnership with Ruby's.
QSR Media: What items have you taken off the menu?
We’ve removed the Chicken & Chorizo Club Salad, the Chicken & Chorizo Club Wrap, and our seasonal special Chilli con Carne.
QSR Media: With the focus on vegetarian and vegan items, what percentage of your menu is now vegetarian? What percentage is vegan?
65% of our menu is now vegetarian and 31% is vegan, an increase of 3.46% and 4.63% respectively from our previous menu.
QSR Media: Are you hoping to attract new customers with this menu or are existing customers changing their preferences?
We want our menu to make it easier for everyone to eat well and live well. That means making dishes that are free from allergens and that everyone can enjoy; items like our Vegan Meatless Meatballs or the LEON Plant Burger with a gluten-free and vegan bun. We listen to our guests’ feedback constantly and we know they want to see dishes with less or no meat, which we think our new menu respond to.”
QSR Media: Why did you decide to partner with Ruby’s rather than develop the vegan dessert in house?
We first tried Ruby’s desserts at her stall in Greenwich Market and thought her range of flavours, formats, and vibrancy were all amazing. Then we met Ruby and fell in love. It was a very natural partnership and after an extensive trial, we’re excited to see her range roll out to all restaurants.
