Caravan Restaurant group to open new concept in Chelsea
Vardo’s menu will feature “carefully sourced ingredients from across the UK with global influence”.
Caravan Restaurant has announced it will open a new restaurant concept at Duke of York Square in Chelsea later this year.
Drawing inspiration from the Romani travelling wagon of the 1800s, Vardo will occupy a newly designed three-storey stone and glass pavilion. Its circular structure will feature wall-to-floor glazing that fully retracts into the floor.
All-day dishes on the menu include: slow braised carrots, brined mustard greens, aji blanco; charred aubergine, saffron buttermilk dressing, grilled Turkish chilli; baharat rubbed lamb cutlets, green harissa, tahini; and green baked eggs with lentil, pine nut and kale ragu, cumin yoghurt, charred pepper salsa.
Since opening in 2010, Caravan now operates five sites in London.
